SPAM -n- Bean Tacos
Thanks to a sharp-eyed reader, Lori Jean Knowles, we're
able to offer this SPAMey twist on an old south-of-the-border favorite.
Lori Jean spotted this recipe in the online edition of the Hondo
Anvil Herald and knew it deserved a place in Tacky Living. Thanks,
Lori Jean!
Of course, a recipe this special deserves an exceptional
apertif. We suggest serving these tacos with our special Otter
Pop Sangria made by combining equal parts Everclear and slightly frozen
Otter Pops. (To make your "Sangria" even more "exceptional", leave
out the Otter Pops altogether.)

Ingredients:
- 1 (12 oz.) can SPAM Luncheon Meat
(Go ahead - use the store brand of spiced luncheon loaf. How much worse
than the name brand could it be?)
- 2 - 3 tablespoons vegetable oil
- 1/2 cup chopped onion
- 2 - 4 fresh serrano peppers, chopped
- 3 cups cooked and seasoned pinto beans (with
some juice)
- flour tortillas
Heat vegetable oil in a large skillet. Cut SPAM into
1/2-inch cubes and heat in oil until slightly browned. Add onion and peppers
and cook until onion is transparent, stirring often. Add prepared beans
to skillet and mash all with a potato masher. Continue mashing until desired
consistency is achieved. Heat thoroughly and allow to simmer for about
5 minutes. Serve on hot tortillas with the usual assortment of taco accompaniments.
Feeds 6 SPAM lovers or one medium-sized dog.
